Well, that was weird. I didn’t indicate to take such a long holiday from healthy eating blogging. I pledge I haven’t been eating junk the entire time I’ve been gone. I’ve simply been feeling uninspired in the kitchen. Does warm weather ever do that to you? truth be told, I might not even have a recipe for you today if it weren’t for a friend’s Facebook status yesterday. It’s true, she wrote, “Will someone PLEASE make a popsicle that has vitamins and protein but still tastes good? because it’s so stinkin’ hot that all I want to eat are popsicles,” and I took it as a personal challenge. My very first thought, for a protein rich popsicle, was custard. and I don’t indicate anything complicated like actually making a custard and then freezing it, but rather that the concept behind a custard be present.

And, so, I slowly whisked 2 cups of scaled skim milk into four cold and beaten eggs. I added 2 tablespoons of sugar (I added two for the kids, but would probably have only added one for myself) and whisked regularly over medium high heat until the mixture reached a low boil. Then, I swiftly removed the mixture from the heat and added 1 tablespoon of molasses, 1 tablespoon of honey and 1 teaspoon of vanilla. 

I blended the mixture thoroughly with 3 bananas, 1 cup of plain yogurt and 1 tablespoon of cocoa. The blended liquid was frothy, at first, so I let it sit for about ten minutes (and scooped the remaining froth from the top) before pouring it into the ice trays. I don’t have any fancy little popsicle makers (although they are now on my list), but I put a piece of foil over the tray to hold the popsicle sticks in place. And, well, it worked good enough for a practice run.
